another nice day......actually although cool a couple of days the weather has been beautiful this week....i only hope it lasts until tomorrow as i have some yard work to do and i would like to play a little golf, provided my feet and legs co-operate/........Thought week and spending 40 hours pounding cement......the feet and legs were giving me a problem today..........not a bad day......just one of those days where your busy all day and accomplish little.......
i got home and had thawed a point cut corn beef that i wanted to cook......to give me a few meals and some sandwiches for the week end.....besides i had bought some jewish rye bread earlier in the week that was sitting there demanding to have some good corn beef between it..... i had gotten a really nice point cut awhile ago...turned out to be just really beautiful.......usually althought the point cut imho is the most flavorful cuts, it sometimes has a lot of fat, but this one was lean...since i was going to just use it for sandwiches and meals i had decided not to veg it up too much, just a few onions, a bit of garlic and some cabbage,,,,salt, pepper and bays leaves......well about 2/3's through the cooking i tasted the stock and was just blow away, just amazing.....so after i pulled the corned beef i added a few wide cut noodles and made some soup from the stock, it's thin actually very thin as opposed to the thick soup i usually make but it will knock your socks off with a very intense flavor........
just hanging out tonight and relaxing.....i need it.......
